Soon I’ll be sharing the adoption stories of all three of the girls, but it would be wrong of me not to start sharing photos before then.  Twyla is the youngest of the Mysfam Cottage furbabies.  All three were adopted…in some form or another.  Twyla was adopted from the Humane Society.  She is our loving, hilarious, crazy, energetic, chair-stealing, dirt-loving, waggy-tailed, bed hog of a pup-pup dog.

Turkey Sausage and Veggie Bake

Mysfam Cottage Turkey Sausage and Veggie Bake

It’s Veggie Time

Ingredients:

 

1 package of Smoked Turkey Sausage

1 medium Sweet Potato

1 Carrot

1 Zucchini

1 Red Bell Pepper

3 baby Red Potatoes

1 Yellow Squash

4 oz. Baby Portabella Mushrooms

1 1/2 cup of broccoli florets 

2 TBSP Olive oil 

Salt and pepper

1/8 tsp Garlic Powder (optional)

¼ tsp Italian Seasoning (optional)

 

Directions:

Preheat oven to 400 degrees.  Wash all the vegetables.  Peel the carrots and sweet potatoes.  Core and seed the red bell pepper. Cut all of the vegetables and turkey sausage into ½ inch to 1 inch pieces and coat in the olive oil. Spread onto baking sheet and season to taste with salt, pepper and other optional seasonings.  Cook for 30 minutes, flipping halfway through.

Serve hot with rice or noodles of your choice.

If you freeze this recipe, thaw in the refrigerator over night and reheat in the microwave for 3 to 5 minutes on high, or until hot, stirring halfway through.

*Cooking hint—place the broccoli, onion, and any veggies you prefer to be a bit softer on bottom of the bake and the mushrooms and sausage on top.  The sausage flavors the bake wonderfully, which is why we don’t really use any additional seasoning most of the time.

This makes four (4) servings with 328 calories per serving.

Life happens.  For good or ill, it happens.  The choices we make and the life events out of our control led us to where we are right now.  Four years ago I was alone in the world, my closest family was either scattered across the country or gone.  The choices I’d made in the years since my mother’s passing were not, what I would consider, wise ones.  I made friends with people who used me as their personal ATM machines which led me into a financial ruin.  My house was foreclosed on, and with nowhere to go, I was homeless.  My car filled to the brim with my most prized possessions, namely my furbaby, Boo.  I was shattered.  Emotionally and spiritually.

Welcome to Mysfam Cottage

Hello and welcome to Mysfam Cottage!  Mysfam Cottage is the unconventional home of two cats, a dog, and two women who started off as roommates who became friends who who grew to become sisters.  Wendy and I are not related by blood or law, but we ARE sisters…soul-sisters.  Which explains the meaning behind MYSFAM–My Sister From Another Mother.

We are an all female household of women (Wendy and Emily), cats (Boo and YinYang), and a dog (Twyla), and have lived at Myfam Cottage for a year, and have experienced the joys and tribulations that come with being homeowners.  Yay, decorating without having to worry about landlords; BOOOO, home repairs and yard work.

Primarily, this website will be used to post our journey towards a healthier us which we began in April of 2017.  I’ll be sharing recipes and some of our experiences as we incorporate this healthy lifestyle.  Our interests are varied, so please be prepared to encounter posts a wide range of topics.  Both of us are creative, so you’ll see everything from photos to crochet projects.

Another Step to a Healthier Mysfam Cottage

This is the Christmas gift to the humans of Mysfam Cottage, from us to us!  It is also something to help us continue on our quest for a healthier us. 

I’d like to introduce you to the newest member of the Mysfam Cottage household.

 

Freezer

 

That’s right!  An upright freezer for our little home.  This is the Christmas gift to the humans of Mysfam Cottage, from us to us!  It is also something to help us continue on our quest for a healthier us.

For a while now we’ve wanted to be able to make and freeze meals, but our normal freezer was usually taken up by frozen vegetables and chicken.  As Thanksgiving has come closer we realized we wouldn’t have any room for the traditional turkey (or two), which is what led to our purchase at this point in time.

From FAT to fit: The Food is Changin’

My eating…my overeating was going to come to an end.  After weeks of drinking more water than I’d care to think about I was about to limit my food intake.

Food.  I LOVE food.  I wouldn’t have gotten to the size I was unless I loved food.  However, the bigger I became I often felt guilty after eating, especially when my meal consisted of a large sized burger, fries, and soda or after my fourth or fifth trip through a buffet line.  But my time had arrived.  My eating…my overeating was going to come to an end.  After weeks of drinking more water than I’d care to think about I was about to limit my food intake.

On June 29th of this year, I joined….rejoined My Fitness Pal, with a starting weight of 265 lbs, I joined…rejoined My Fitness Pal.  (www.myfitnesspal.com)

After updating my information I started with a daily calorie goal of 1,500.  Utilizing My Fitness Pal to track my food intake was the first step.  I stepped out of my introverted comfort zone and joined groups and added friends, building the online support I would need to succeed in my weight loss goal.

From FAT to fit: The Time is NOW!

I knew from past, personal experience trying to make a lot of changes at once would led to failure, so I researched how to lose weight. Most would say, well, that’s easy. Don’t eat bad-for-you foods. Exercise. Yeeeaaaahhhh, no. Been there, tried that, got the t-shirt I’m too fat to wear in the back of my closet…

The time is now. My time. I’d found my trigger. My goal. My carrot at the end of the stick. A vacation to Hawaii. I knew from past, personal experience trying to make a lot of changes at once would lead to failure, so I researched how to lose weight. Most would say, well, that’s easy. Don’t eat bad-for-you foods. Exercise. Yeeeaaaahhhh, no. Been there, tried that, got the t-shirt I’m too fat to wear in the back of my closet…

After all of my researching, I knew I had to incorporate three things into my life. More water, exercise, and less food. Using my past failures as a guide, Now is the time. My time. I’d found my trigger. My goal. My carrot at the end of the stick. A vacation to Hawaii. From FAT to fit: Leading to The Beginning of a Work in Progress

I didn’t have a goal in mind other than that unobtainable goal: to be skinny…From FAT to fit: Leading to the Beginning of a Work in Progress

Fat.  It may only have three letters, but it can be as, if not more, insulting as a four letter word.  The negative connotations associated with it are endless. It is used as one of the cruelest most degrading sort of insults a person can sling at another.  To be fat is to be lazy, gross, unhealthy, unattractive…the list goes on.

I’ve struggled with my weight my entire life.  I can’t remember a time when I wasn’t fat.  I was six years old the first time I can remember being told “You’d be so pretty if you were skinny” and “you’ll never get married if you don’t lose weight” and “you’ll never find a boy by being fat”.  These phrases came from my own family members.  Think about that for a moment.  Six.  Years.  Old.  Who tells a six year old anything like that?  And you know what?  I believed them.
