Emily’s Journey: Falling Off the Wagon

I can honestly say I not only fell completely off the healthy lifestyle wagon, but gleefully jumped off, head first, and smashed into a raging torrent of calorie filled excess.

The holiday season has come and gone.  During the holidays I, like many others, was less than prudent in my food choices.  But, like so many others, I did so with every intention of getting right back into the swing of things.  However, my holiday “break” was so bad I haven’t weighed myself since shortly after returning home from the Christmas holiday.  Continue reading “Emily’s Journey: Falling Off the Wagon”

Veggie Bake Mysfam Style

The Turkey Sausage Veggie Bake is one of Mysfam Cottage’s favorite recipes, but it can easily be changed to be a vegan/vegetarian recipe with a few changes.  Considering that I overindulged in a few too many Christmas cookies I thought a lighter recipe was a great way to start the New Year.  This recipe works great as a veggie side or a full meal for meat free Monday.  The serving size is great for a light lunch, but I usually half a serving as a side veggie.

Emily’s Journey: My End of Year Check-In

The year is winding down I’ve been thinking about the past eight months.  So far, I’ve lost almost 100 lbs because I didn’t want to have to pay extra for my flight when my BFF and I took our Hawaii trip.  The trip may have been postponed, but it was the catalyst to behind my determination to lose weight.  I wanted to share some of the things I’ve learned so far that have helped me.

Emily’s Journey: Self-Challenge

There is a level in hell called exercise, and nothing you say can convince me otherwise.  As part of my new healthy lifestyle adding exercise has been the hardest.  Still, I’ve been walking more as part of my “five minutes of exercise a day” routine, which of course, lasts longer than five minutes, but I also planned on incorporating yoga into the mix.  However, shocker alert:  I’m lazy and kept procrastinating. Hawaiian Chicken Mysfam Style

I’m going to be sharing my all-time favorite recipe with you.  This recipe is easy to make with only four ingredients and has some of my favorite foods in one flavor packed dish!  Pineapple, bacon, and mushrooms, oh my!  Even better, it has less than 300 calories and almost 29 grams of protein per serving.

From FAT to fit: Life Never Goes as Planned

Just a bit of a notice:  This post is really short.

I’ve been working on my minuscule five-minute exercise time goal I’d mentioned in my From FAT to Fit: Emily’s Journey post.  Correction—I’ve been working on my minuscule five-minute exercise time goal over the weekend.  Weekdays, those I still have to work on.  But because I’m still slacking I figured I’d just make it up over the weekend.

From FAT to Fit: Emily’s Journey

My journey towards a healthier lifestyle has so far led me to increase my water intake daily and to dramatically decrease my daily calorie intake.  (You can read about it:  HERE–A Work in Progress  HERE–The Time is Now And HERE–The Food is Changin’)

In eight months I have lost a significant amount of weight.  My known heaviest was 289 lbs, but these changes have led to my current weight of 197 lbs, a change of almost 100 lbs.  Now I’ve had to come up against my biggest challenge thus far.  Exercise.

For me, the endorphins released after a good solid workout, that runner’s high everyone is always talking about…

Turkey Sausage and Veggie Bake

Mysfam Cottage Turkey Sausage and Veggie Bake

It’s Veggie Time

1 package of Smoked Turkey Sausage

1 medium Sweet Potato

1 Carrot

1 Zucchini

1 Red Bell Pepper

3 baby Red Potatoes

1 Yellow Squash

4 oz. Baby Portabella Mushrooms

1 1/2 cup of broccoli florets

2 TBSP Olive oil

Salt and pepper

1/8 tsp Garlic Powder (optional)

¼ tsp Italian Seasoning (optional)

Preheat oven to 400 degrees.  Wash all the vegetables.  Peel the carrots and sweet potatoes.  Core and seed the red bell pepper. Cut all of the vegetables and turkey sausage into ½ inch to 1 inch pieces and coat in the olive oil. Spread onto baking sheet and season to taste with salt, pepper and other optional seasonings.  Cook for 30 minutes, flipping halfway through.

Serve hot with rice or noodles of your choice.

If you freeze this recipe, thaw in the refrigerator over night and reheat in the microwave for 3 to 5 minutes on high, or until hot, stirring halfway through.

*Cooking hint—place the broccoli, onion, and any veggies you prefer to be a bit softer on bottom of the bake and the mushrooms and sausage on top.  The sausage flavors the bake wonderfully, which is why we don’t really use any additional seasoning most of the time.

This makes four (4) servings with 328 calories per serving.

The Beginning of Mysfam Cottage: How We Met

Life happens.  For good or ill, it happens.  The choices we make and the life events out of our control led us to where we are right now.

Life happens.  For good or ill, it happens.  The choices we make and the life events out of our control led us to where we are right now.  Four years ago I was alone in the world, my closest family was either scattered across the country or gone.  The choices I’d made in the years since my mother’s passing were not, what I would consider, wise ones.  I made friends with people who used me as their personal ATM machines which led me into a financial ruin.  My house was foreclosed on, and with nowhere to go, I was homeless.  My car filled to the brim with my most prized possessions, namely my furbaby, Boo.  I was shattered.  Emotionally and spiritually.

Welcome to Mysfam Cottage

Hello and welcome to Mysfam Cottage!  Mysfam Cottage is the unconventional home of two cats, a dog, and two women who started off as roommates who became friends who who grew to become sisters.  Wendy and I are not related by blood or law, but we ARE sisters…soul-sisters.  Which explains the meaning behind MYSFAM–My Sister From Another Mother.

We are an all female household of women (Wendy and Emily), cats (Boo and YinYang), and a dog (Twyla), and have lived at Myfam Cottage for a year, and have experienced the joys and tribulations that come with being homeowners.  Yay, decorating without having to worry about landlords; BOOOO, home repairs and yard work.

Primarily, this website will be used to post our journey towards a healthier us which we began in April of 2017.  I’ll be sharing recipes and some of our experiences as we incorporate this healthy lifestyle.  Our interests are varied, so please be prepared to encounter posts a wide range of topics.  Both of us are creative, so you’ll see everything from photos to crochet projects.

So, that being said, welcome to our trials and triumphs, happy reading!
