The first anniversary of Mysfam Cottage is just starting to peak over the horizon, and we’ve celebrated our first Thanksgiving at the Cottage. Our families are either scattered across the U.S. or celebrating the holiday with other familial branches, so while our household may be small in number, it is not small in friendship and sisterhood.
Mysfam Cottage Turkey Sausage and Veggie Bake
1 package of Smoked Turkey Sausage
1 medium Sweet Potato
1 Red Bell Pepper
3 baby Red Potatoes
1 Yellow Squash
4 oz. Baby Portabella Mushrooms
1 1/2 cup of broccoli florets
2 TBSP Olive oil
Salt and pepper
1/8 tsp Garlic Powder (optional)
¼ tsp Italian Seasoning (optional)
Preheat oven to 400 degrees. Wash all the vegetables. Peel the carrots and sweet potatoes. Core and seed the red bell pepper. Cut all of the vegetables and turkey sausage into ½ inch to 1 inch pieces and coat in the olive oil. Spread onto baking sheet and season to taste with salt, pepper and other optional seasonings. Cook for 30 minutes, flipping halfway through.
Serve hot with rice or noodles of your choice.
If you freeze this recipe, thaw in the refrigerator over night and reheat in the microwave for 3 to 5 minutes on high, or until hot, stirring halfway through.
*Cooking hint—place the broccoli, onion, and any veggies you prefer to be a bit softer on bottom of the bake and the mushrooms and sausage on top. The sausage flavors the bake wonderfully, which is why we don’t really use any additional seasoning most of the time.
This makes four (4) servings with 328 calories per serving.

Four years ago I was alone in the world, my closest family was either scattered across the country or gone. The choices I’d made in the years since my mother’s passing were not, what I would consider, wise ones. I made friends with people who used me as their personal ATM machines which led me into a financial ruin. My house was foreclosed on, and with nowhere to go, I was homeless. My car filled to the brim with my most prized possessions, namely my furbaby, Boo. I was shattered. Emotionally and spiritually.
My eating…my overeating was going to come to an end. After weeks of drinking more water than I’d care to think about I was about to limit my food intake.
Food. I LOVE food. I wouldn’t have gotten to the size I was unless I loved food. However, the bigger I became I often felt guilty after eating, especially when my meal consisted of a large sized burger, fries, and soda or after my fourth or fifth trip through a buffet line. But my time had arrived. My eating…my overeating was going to come to an end. After weeks of drinking more water than I’d care to think about I was about to limit my food intake.

After updating my information I started with a daily calorie goal of 1,500. Utilizing My Fitness Pal to track my food intake was the first step. I stepped out of my introverted comfort zone and joined groups and added friends, building the online support I would need to succeed in my weight loss goal.
